From Middle English Ebreu, from Old French Ebreu, from Latin Hebraeus, from Ancient Greek Ἑβραῖος (Hebraîos), from Aramaic עִבְרַי (ʿiḇray), from Hebrew עִבְרִי (ʿiḇrī́). The ending -ew underwent a similar evolution to that seen in Bartholomew (ultimately from Latin Bartholomaeus) and Jew (from Latin Iudaeus, with loss of the -ud-).
