Pigs, cattle and other chalkland livestock Historians have frequently neglected the other demesne animals that were an important part of chalkland farming. The stockbook of Winchester Cathedral Priory can again be used to provide a snapshot of all the livestock on a large estate in the chalklands of southern England. In 1390, in addition to the 20,357 sheep, there were 1808 pigs, 929 cattle and 209 horses. Comparison with the near-contemporary account of the bishop of Worcester for 1389 shows the distinctiveness of chalkland agriculture compared with agriculture elsewhere, in this case the west midlands.
